Smith is one of our favorite varieties, certainly in our top 10. And it just keeps getting better every year. It is one of the best fig varieties for the humid southern US. It is a premium heirloom from Louisiana, but originally considered to be from Croatia. Its skin can take on various colors, depending upon conditions, with red pulp. It has a tight ostiole, which helps it resist splitting, spoiling, and insects. It has the perfect balance of acidity and sweetness, along with a complex mix of berry flavors. The figs are chewy (but not tough), with moderate seed crunch. Figs ripen August through the end of growing season.
The only draw-back is that it isn’t all that productive. We may have to start another tree in a better location.
